Nonni Musumeci's Tamale Pie
(Serves 8)
Prep time: 2 hrs
A real winner!
This recipe is a hearty main meal, doubles as hors d'ouvres,
and keeps well for night passages.
Brown in hot oil in large pot:
1 lb hamburger 1 chopped bell pepper 1 chopped onion 1 chopped garlic clove 1 bunch chopped cilantro
Keep simmering and add:
2 11-oz cans corn 2 6-oz cans med pitted blk olives 2 14-oz cans stewed, whole or "6-in-1" tomatoes 1 small can tomato sauce 2 cups water 1/2 t cumin powder 2 T chile powder 1 t cayenne Salt & Pepper to taste
Simmer for 20 minutes, stirring constantly and adjusting water/tomato sauce as needed to maintain soupy consistency. Bring to bubbling boil and add by drizzling slowly into boiling mixture:
1 cup polenta
Simmer 20 minutes, stirring & scraping bottom of pot frequently (or pour into casserole & bake @ 350). Adjust seasonings to taste.
Garnish with grated cheese & olives. Serve hot.
